Korean Fried Noodles (Jap Chae or Chap Chae)

Dalgano - Recipes Korean  Korean fried noodles (Chap Chae or Jap Chae) are one of the most popular noodle dishes in Korea and also seem to be the most favored by Westerners. The base of the dish is Korean glass noodles, which can be made with green beans or sweet potatoes.

The name glass noodles come from the fact that Chap Chae noodles turn clear when cooked. They almost look like little glass spirals in a bowl. They can be sold as plastic noodles or Chinese noodles.

This dish works well as a starter or as a main dish for lunch or dinner. Additionally, it can be served hot or cold, depending on the season and personal preference. It is also easy to prepare as a vegetarian dish. Since green bean or sweet potato noodles absorb a lot of flavors, you can combine vegetables or meat as you wish.

Jap Chae or Chap Chae


Ingredients

  • 1 sweet onion then thinly sliced
  • 2 cloves of garlic then finely chopped
  • 1/2 pound baby spinach then boiled
  • 2 carrots then cut into matchsticks
  • 3 scallions then chopped
  • 1/2 cup Napa cabbage then chopped
  • 5 shiitake mushrooms then rehydrated if dry and then sliced
  • 2 tablespoons vegetable oil
  • 2 tablespoons of sesame oil
  • 8 ounces of glass noodles then cooked according to package directions
  • 3 tablespoons soy sauce
  • 1 teaspoon sugar
  • Salt to taste)
  • Optional: sesame seeds



How to Make Chae Chae

  1. Gather the ingredients.
  2. In a large saucepan or skillet over medium heat, heat the vegetable (or olive) oil and 1 tablespoon sesame oil.
  3. Add the sliced onion and garlic and sauté for about 1 minute.
  4. Add the remaining vegetables and cook for 4 to 5 minutes, until the vegetables are half cooked and still slightly crunchy.
  5. Reduce heat and add cooked noodles, soy sauce, sugar and remaining sesame oil.
  6. mix all and cook for 2 minutes
  7. Add salt or soy sauce if necessary.
  8. If using sesame seeds, add them at the end.
