Ingredients:

  • 1 kg of chicken thigh fillets with skin

  • 1½ tablespoons of rice vinegar or 1 tablespoon of desk vinegar
  • 2 tablespoons katsuobushi (bonito flakes, optional
  • ½ tablespoon of dry wakame, optional
  • 150 milliliters of water
  • 2 slices of ginger


Japanese tartar:

  • 3 eggs (boiled 8 minutes), cut
  • 8 tbsp Mayones.
  • 2 teaspoons of rice vinegar or 1 teaspoon of desk vinegar
  • 2 teaspoons of honey / sweetened thick / sugar
  • 1 tsp dashi powder/powder broth
  • ¼ tsp white pepper
  • 1 stalk of small leeks, softly chopped


Other material:

  • Cabbage, sliced, soak ice water

How to make Nanban Chicken food:
