Japanese Katsudon Chicken Recipe


Dalgano Japanese Food Katsudon is a traditional Japanese rice bowl that is very popular in the world, and it's easy to see why – it's because of the perfect mix of sweet and salty, which is filled with a delightful texture, thanks to the crispy fried chicken and breadcrumbs between the soft eggs. Ingredients:

  • 4 pcs chicken breast (every 150 grams)
  • 4 bowls of white rice
  • 140 grams of onion (sliced)
  • 8 eggs (broken into 2 parts)
  • 160 grams of all-purpose flour
  • 160 grams panko (Japanese bread flour)
  • 80 ml mirin
  • 8 tsp dashi powder (Japanese stock) (dissolve in 440 ml water)
  • 80 ml soy sauce
  • 45 grams of salt
  • 125 grams of sugar
  • Vegetable oil (for frying)
  • Japanese rice for 2 people



Method of making:

  1. Heat vegetable oil for frying in a frying pan.
  2. Place flour, 2 beaten eggs, and panko breadcrumbs into 3 different bowls
  3. Dip the chicken breast into the flour, then dip it again into the beaten egg and finally into the breadcrumbs
  4. Fry for 4-5 minutes, until cooked. Remove then drain, slice the chicken.
  5. In a skillet, heat 1 tbsp vegetable oil over medium heat
  6. Saute onions until cooked
  7. Add dashi stock, soy sauce, sugar, and mirin and simmer for 1-2 minutes.
  8. Pour the beaten eggs in a circular motion and turn off the heat
