Syrniki is slightly sweet and cheesy Russian pancakes made from Farmer's cheese. They are super soft and just a little sweet on the inside. These fluffy pancakes with the goodness of cheese are simply delicious.

Ingredients:

  • 1 pound farmer's cheese
  • 2 eggs
  • + cup all-purpose flour, divided
  • cup sugar
  • teaspoon salt
  • Optional: raisin cup
  • 6-8 tablespoons vegetable oil, for frying


How to Make Syrniki (Russian Cheese Pancakes) Recipe:

  1. Prepare the dough: In a large bowl, crush the farmer's cheese into small pieces with a fork. Add 2 eggs and mix well. Add a cup of flour (reserving a cup for step 2), sugar, and salt. Stir well, using a fork to break up lumps of flour or farmer's cheese. Add raisins, if using. The 'dough' will be thick like dough, unlike traditional pancake batter.
  2. Syrniki pancake shape: Prepare a small bowl with about a cup of flour - you will use it to dredge the pancakes.
  3. Take about a cup of pancake batter at a time. (See recipe notes below) Use your hands to flatten the dough into small patties. Dust the pancakes with flour on both sides. Whisk in the extra flour and set aside until you are ready to cook the syrniki pancakes.
  4. Cook the syrniki pancakes: In a large skillet, heat 3-4 tablespoons of vegetable oil, and gently place the floured cheese pancakes into the skillet using a spatula. Cook over medium-low heat for about 4-5 minutes per side, or until each side is golden brown. Place on paper towels to cool. Do not overcrowd the pancakes - cook in 2-3 batches if necessary.
