Dalgano - Italian Food |  Fried tagliatelle is a carnival dessert of the Emilia-Romagna tradition. Sweet and flavorful egg pasta, which turns into crispy, crumbly, and inviting slices.

Fried tagliatelle is Emilia Romagna's signature Carnival sweet. A simple egg paste, made like traditional tagliatelle, specially made with added sugar, lemon zest, and then, of course, by frying.

INGREDIENTS:

  • 200 gr wheat flour 00
  • 2 eggs
  • 1 tablespoon rum
  • 150 gr sugar
  • grated rind of 2 unprocessed lemons
  • peanut oil for frying



How to Make Tagliatelle fritte:

  1. To prepare the fried noodles, collect the flour in a bowl or on a work surface. Peel the eggs in the middle and add the rum. Beat with a fork gradually picking up a little flour around it until everything is combined, then knead by hand or with a planetary mixer. You need to get a smooth and homogeneous paste. Form a loaf, wrap in cling film and leave in the refrigerator for 30 minutes.
  2. After this time, take the dough and divide the dough into 4 equal parts. Remove one by one, leave the rest wrapped in cling film, and flatten with a rolling pin until it reaches the width of the roll of the dough sheeter machine. Roll out the dough by sliding notches from thickest to thinnest: the final sheet should be the same thickness as the classic tagliatelle. Sprinkle the cake slices with a quarter of the sugar and the zest of half a lemon. It rolls up on its own by tightening it a little. Roll out the second dough in the same way, sprinkle with sugar and lemon zest and then place the previously obtained dough cylinder on one end of this second sheet. Roll everything up and set it aside.
  3. Cut both rolls into 1 cm thick slices, place each of the resulting slices on a floured tray, and leave to dry for 30 minutes.
  4. Then fry a few pieces at a time in plenty of hot peanut oil. Allow the fried noodles to brown then remove with a slotted spoon and dry on absorbent paper before dusting with icing sugar.
