How to Cook Pfeffernusse Cookies

Ingredients Pfeffernusse Cookies:

  • 1/2 cup molasses
  • 1/4 cup honey
  • 1/4 cup butter, diced
  • 1/4 cup shortening
  • 2 large eggs, room temperature
  • 1-1/2 teaspoons of anise extract
  • 4 cups all-purpose flour
  • 3/4 cup sugar
  • 1/2 cup packaged brown sugar
  • 2 teaspoons cinnamon powder
  • 1-1/2 teaspoons of baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon cardamom powder
  • 1 teaspoon nutmeg powder
  • 1 teaspoon ground cloves
  • 3/4 teaspoon coarsely ground pepper
  • 1/2 teaspoon salt
  • 1 cup confectionery sugar

How to Make Pfeffernusse Cookies:

  1. In a small saucepan, combine molasses, honey, butter, and butter. Cook and stir over medium heat until dripping. Remove from heat; cool to room temperature. Stir in eggs and concentrate.
  2. Combine flour, granulated sugar, brown sugar, cinnamon, baking soda, ginger, cardamom, nutmeg, cloves, pepper, and salt. Gradually add the molasses combination and mix until smooth. Cover and refrigerate for a minimum of 2 hours or overnight.
  3. Preheat the oven to 325°. Roll dough into a 1-in. ball. Place 1 inch apart on a greased baking sheet. Bake 12-15 minutes or until golden brown. Remove cookies to the wire rack. Roll warm cakes in confectioner's sugar. Cool completely. Put in an airtight container.
