The latter is a must because this dish requires quite a lot of curry leaves – especially during the presentation. INGREDIENTS:

  • 1600g free-range chicken, cut into 18 pieces
  • 2 packs of Bango Bacem Fried Chicken Seasoning
  • 4 tablespoons brown sugar gula
  • 12 orange green leaves
  • 8 lemongrass stalks, bruised
  • 1000 ml water
  • 700 ml oil, for frying

Fried Spices:


  • 24 curly green chilies, cut into 6 cm
  • 20 pandan leaves, sliced
  • 20 pieces of kola bay leaves/curry leaves
  • 10 pieces of turmeric leaves, sliced
  • 100g red onion, sliced
  • 4 cloves garlic, chopped





HOW TO MAKE ACEH SPECIAL CATCH CHICKEN:

  1. Put the ingredients for the water, chicken, brown sugar, lime leaves, lemon grass, and ground spices into a saucepan. Pour the soy sauce Bango Bacem Fried Chicken, stir until evenly distributed. Cook over low heat until the chicken is cooked and tender. Lift. Set aside.
  2. FRIED SPICES: Heat oil, fry green chilies, pandan leaves, koja bay leaves, and turmeric leaves until almost crisp. Add the onion and garlic, cook until all the ingredients are crispy. Lift. Drain. Set aside.
  3. Fry the fresh chicken meat in the remaining oil from frying the leaf spices. Cook until golden brown. Lift.
  4. Stir well the chicken meat with the fried spices and serve.
