Sepecial Padang Soto Recipe




Soto Padang, traditional from Padang, West Sumatra. Crispy beef with potato patty and glass noodles served in a clear and spicy beef broth. Accompanied by pink tapioca crackers. The broth is served in a ceramic bowl and placed on a plate lined with banana leaves.



Ingredients:


  • 1000 grams of beef
  • 4 liters of water
  • 6 cm galangal, bruised
  • 4 lemongrass stalks, bruised
  • 6 grains of cardamom
  • 10 cloves
  • 4 star anise / deaf
  • 10 lime leaves
  • 6 teaspoons salt
  • 1 teaspoon sugar
  • 2 teaspoons pepper powder
  • 2 teaspoons curry powder
  • 4 spring onions, sliced
  • 6 tablespoons oil, for frying


Fine Material:


  • 24 red onions.
  • 14 cloves of garlic.
  • 6 cm ginger.
  • 2 cm of turmeric.


Complementary:


  • Potato fritters.
  • Shrimp crisp.
  • Chilli sauce.
  • Fried onions.
  • Soun.
  • Lime.





How to make:


  1. Boil the meat with galangal and salt until soft, then remove and drain the meat and strain the broth.
  2. Heat oil, saute ground spices until fragrant and cooked. Then add lemongrass, lime leaves, cardamom, cloves, and star anise.
  3.  Pour the remaining broth along with the meat, add salt, sugar, curry powder, and pepper. Bring to a boil over low heat. Taste test until it matches your taste, then add the scallions.
  4. Drain the meat and cut into thin strips. Meat can be fried first, or can be served immediately.
  5.  Prepare a serving bowl, then serve the soup and its complements while still hot.
  6.  Special Soto Padang is ready to be enjoyed.
