Ingredients:

  • 500 g scallop meat (skinless)
  • 4 cm ginger
  • 2 lemongrass stalks
  • 4 lime leaves
  • 4 cm ginger
  • 2 tbsp sweet soy sauce
  • 2 tsp palm sugar
  • 1 tbsp tamarind water
  • 200m water
  • 2 tsp salt
  • 2 tsp pepper
  • enough oil
  • Skewers
  • 10 pieces of curly red chili
  • 18 red onions
  • 6 cloves of garlic
  • 4 cm galangal
  • 4 cm turmeric 
  • 2 tsp coriander


How to make Tembird satay:

  1. Clean the clams and boil with ginger, cook until cooked.
  2. Puree curly red chilies, shallots, garlic, galangal, turmeric, and coriander with 3 tablespoons of oil and a pinch of salt.
  3. Heat oil, saute ground spices, ginger, lemongrass, and lime leaves until fragrant.
  4. Enter the clams, add water, sweet soy sauce, brown sugar, and tamarind water. Stir well, cook until the spices are absorbed.
  5. Season with salt and pepper. Separate the clams and the gravy, make the gravy as a spread.
  6. Skewer the scallops and grill over coals or grill until fragrant. Apply several times with the remaining spices.
