Ingredients Mentai Sushi Roll Recipe (for 6 rolls):

Sushi rice:

  • 1 cup rice, cleaned
  • cup glutinous rice, cleaned
  • 2 cups + 4 tablespoons water


Sushi vinegar:

  • 4 tablespoons of rice vinegar
  • 2 tablespoons of water
  • 2 tablespoons of sugar
  • 1 teaspoon salt


Stuffing:

  • 7 pcs chicken sausage
  • 1 Japanese cucumber, sliced ​​and seeds removed


mentai sauce:

  • 9 tablespoons mayonnaise
  • 1 tablespoons chili sauce
  • 1 tablespoons tomato sauce
  • 1 tablespoon chili powder
  • 1 piece of soft garlic
  • 2 tablespoons of rice vinegar
  • teaspoon salt
  • teaspoon pepper
  • 4 teaspoons of sugar
  • 1 teaspoon mushroom stock/dashi


Soy sauce:

  • 2 tablespoons of honey
  • 2 tablespoons soy sauce


Tempura Dough:

  • 10 tablespoons low protein flour
  • 25-30 tablespoons cold water
  • 1 tsp vinegar
  • teaspoon baking soda


Other Seasonings:

  • 3 strands of nori, size 20 x 20 cm
  • Wheat flour for tempura coating
  • The oil for frying



How to Make a Chicken Katsu Sushi Recipe:

  1. Enter the washed rice and glutinous rice and water, then cook with a rice cooker until cooked
  2. Mix all the sushi vinegar ingredients until dissolved, mix with the cooked rice until smooth, and cover with a damp cloth so it doesn't dry out
  3. Bring water to a boil, boil 4 sausages for 1 minute and then dry. Cut the sausage in a circular direction to make the next sheet, slice it according to your taste
  4. For the tempura dough, mix the vinegar and baking soda until frothy, then add the water and flour and mix until smooth. Slice 4 sausages and sprinkle the top with flour, dip into the tempura mixture and fry in hot oil until golden brown. Fry the remaining tempura batter to make tonkatsu
  5. Mix all the mentai sauce ingredients until smooth
  6. Mix soy sauce and honey, set aside
  7. Prepare a sushi mat and cover it with cling wrap so it doesn't stick and spread it with a little oil then place the nori that has been separated into 2 (10 x 20 cm) on it then place the rice on it and flatten it but don't press it. Turn the rice over so that it is on the bottom then place the tempura, cucumber slices, tonkatsu, mentai sauce, and soy sauce, then roll it up and press to make it firm.
  8. Place the pieces of boiled sausage on it, compact it using a sushi mat, and cut it into 8 equal sides
  9. Put mentai sauce on top of the sausage then torch it until it is brown then add the tonkatsu topping
  10. Mentai sushi roll is ready to serve
