Dough Material:

  • 200 grams of wheat flour
  • 3 teaspoons of baking powder
  • 3 teaspoons salt
  • 1 egg yolk
  • 400 ml cold water

How to make the dough:

  1. Stir in flour, baking powder, and salt until smooth.
  2. Beat the egg yolks, then add the cold water. If necessary, add 2 ice cubes. You have to keep the flour mixture cold at all times because the crunchiness of the shrimp tempura comes from the temperature difference between the oil used for frying and the flour mixture.
  3. Pour the egg mixture into the flour mixture. Stir with chopsticks until no more than 10 times. You don't need to mix the eggs and flour until they are evenly distributed, so you don't have to worry if there are still lumps of flour. If the dough is stirred too much, your shrimp tempura will not turn out crispy.

How to fry prawns:

  1. Sprinkle a little cornstarch over the cleaned prawns.
  2. Dip the prawns in the flour mixture several times until all parts of the shrimp are coated with the flour mixture, except for the tail.
  3. Fry the prawns for 2-3 minutes until golden. Use plenty of hot oil when frying prawns.
  4. If you want your prawn tempura to have a lot of 'shell' on it, pour a little extra flour mixture over the prawns after the prawns have been fried for 5-7 seconds.
  5. Remove the prawns and drain the oil. If necessary, place the fried shrimp on a paper towel to absorb excess oil. Serve the prawns while hot.
