Chinese Peking Duck

Ingredients:

  • 1 whole duck
  • teaspoon cinnamon powder
  • teaspoon ginger powder
  • teaspoon nutmeg powder
  • teaspoon white pepper powder
  • ? teaspoon clove powder
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 orange, sliced ​​round
  • 1 tablespoon chopped fresh parsley, for garnish
  • 5 spring onions
  • cup plum jam
  • 1 teaspoon sugar
  • 1 teaspoon white vinegar
  • cup chutney (optional)


How to make:

  1. Rinse the inside and outside of the duck, then pat it dry with a paper towel. Cut the ducktail and throw it away. In a small bowl, mix cinnamon powder, ginger powder, nutmeg, white pepper, and cloves.
  2. Apply a teaspoon of the marinade to the inside of the duck. Stir a tablespoon of soy sauce into the remaining seasoning mixture and spread it evenly all over the outside of the duck.
  3. Cut one of the scallions in half and put it inside the duck. Cover and let the duck rest for at least two hours or overnight.
  4. Place the duck breast face up on a large skillet or saucepan and steam for an hour.
  5. Remove the duck with two large spoons, drain the water. Take the onions. Preheat oven to 374 degrees Fahrenheit or 188 degrees Celsius.
