Ingredients:

  • 8 corn cobs, peeled and cleaned
  • 2 pounds tomatoes - peeled, seeded, and coarsely chopped
  • 1 cup chopped green bell pepper
  • cup chopped red bell pepper
  • cucumber, chopped
  • 1 cup chopped onion
  • 1 cup white sugar
  • 2 cups apple cider vinegar
  • 1 tbsp salt
  • 1 tsp celery seeds
  • 1 tsp mustard seeds



Corn Relish Cooking Steps:

  1. Cut the corn from the cob. Rub the cobs with a large spoon to remove any remaining juice.
  2. In a large saucepan, combine corn kernels and juice, tomatoes, green peppers, red bell peppers, cucumbers, and onions.
  3. In a medium bowl, combine sugar, apple cider vinegar, salt, celery seeds, and mustard seeds. Pour into the saucepan over the vegetable combination. Bring to a boil, then simmer for 1 hour.
  4. Transfer the finished dish to a sterile jar. Refrigerate until served.
