Ingredients:
- 8 corn cobs, peeled and cleaned
- 2 pounds tomatoes - peeled, seeded, and coarsely chopped
- 1 cup chopped green bell pepper
- cup chopped red bell pepper
- cucumber, chopped
- 1 cup chopped onion
- 1 cup white sugar
- 2 cups apple cider vinegar
- 1 tbsp salt
- 1 tsp celery seeds
- 1 tsp mustard seeds
Corn Relish Cooking Steps:
- Cut the corn from the cob. Rub the cobs with a large spoon to remove any remaining juice.
- In a large saucepan, combine corn kernels and juice, tomatoes, green peppers, red bell peppers, cucumbers, and onions.
