Ingredients

  • 5 1/3 cups all-purpose flour
  • 1 1/2 teaspoon kosher salt
  • 6 large eggs
  • 2 tablespoons oil
  • 6 tablespoons of water
  • 4 to 5 slices of bacon, cooked and chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, chopped
  • 2 ounces bread, day old
  • 10 ounces frozen spinach, thawed, dry pressed, chopped4 tablespoons parsley, chopped
  • 2 tablespoons spicy mustard
  • 1/2 teaspoon dry thyme
  • 1/2 teaspoon dry marjoram
  • 16 ounces ground beef
  • 2 pinch pepper
  • 3 to 4 liters beef stock, or other stock
  • Chopped chives or parsley, for garnish



How to Make Maultaschen 

Making Dough

  1. Combine 22/3 cup flour, 1/2 teaspoon salt, 2 eggs, 1 tablespoon oil, and 3 tablespoons water to make a smooth dough.
  2. Knead for 5-10 minutes until smooth. Form the dough into balls, grease the surface, wrap in a wrap, and let rest for at least an hour.

  1. Cook the bacon and remove it from the pan. Saute onions and garlic in bacon until translucent.

Cook Dumplings and Serve

  1. Reduce the heat to low and add 1/3 Maultasche to the ingredients. Cook for 15-20 minutes. Remove and drain. If not served immediately, keep warm. Repeat with remaining dumplings.
  2. Place in a small soup bowl and sprinkle with scallions and parsley.
