Ingredients:

  • 360 g brown rice
  • 2 medium courgettes
  • 2 bell peppers (red and yellow)
  • Greek feta to taste
  • extra virgin olive oil to taste
  • salt to taste
  • pepper as needed
  • fresh mint as needed



Steps to Make Italian Feta Salad Pink Rice:

  1. First, keep a pot of water on the stove, bring it to a boil, add salt to the water and cook the rice for the time indicated on the package.
  2. Meanwhile, clean the vegetables, cut them into sticks, and grill them on a non-stick grill.
  3. Cut the feta into cubes and set aside.
  4. Drain the rice, dry well and pour into a baking dish, spread well, season with olive oil, and let cool.
