Ingredients
- 2 tbsp vegetable oil
- 4 tablespoons white miso
- 1kg chicken wings
- 100 gr gold caster sugar
- 30g butter
- lime, squeeze
- 1 tbsp sesame seeds
How to Make Japanese Miso Caramel Chicken Wings:
- Preheat oven to 200C/180C fan/gas 6. Combine oil with 2 tbsp miso, dip chicken wings into the batter to coat, season well, and spread on a large baking sheet. Place in the oven for 45 minutes.
- Put the sugar in a saucepan with 2 tablespoons of water and gently dissolve the sugar. When they are no longer grainy, raise the temperature, keep an eye on them, and boil them until they are caramelized yellow. Turn off the heat and gently stir in the remaining miso, butter, and lime juice. Set aside.
- Pour caramel over chicken wings, coat everything. Sprinkle with sesame seeds, then return to oven for 5 minutes.
