Aceh's Typical Rumbi Kanji Porridge

Dalgano - So rich, Indonesia has special culinary in every region special moments. This Ramadan is no exception. As in Aceh, local people usually eat rumba starch porridge which is rich in Acehnese spices.

Ingredients:

  • 4 tablespoons ghee
  • 12 cloves of red onion, thinly sliced
  • 4 cloves of garlic, thinly sliced
  • 500 grams of prawns, peeled and roughly chopped
  • 1.5 cups of rice, wash and then soak an hour
  • 2 boiled free-range chickens with 3 liters of water (set aside),
  • Chicken meat to taste, cut into cubes or shredded
  • 12 Indian cardamom seeds
  • 6 cm cinnamon stick
  • 16 cloves
  • 2 pieces of flower
  • 2 nutmeg
  • 2 pandan leaves, tie a knot
  • fried onions
  • 4 tablespoons oil for frying
  • curry leaves to taste
  • salt and pepper to taste

fine seasoning ingredients:

  • 2 teaspoons of anise
  • 2 teaspoons pepper
  • 2 nutmeg
  • 2 teaspoons coriander, lightly roasted
  • 16 cloves of red onion
  • 8 cloves of garlic
  • 2 thumbs ginger

How to make:

  1. Add chopped onion and garlic, saute in oil.
  2. Add cardamom, cloves, nutmeg, cinnamon, star anise until it turns yellow.
  3. Add chicken and shrimp pieces (chicken and shrimp pieces can be boiled first).
  4. Add rice, stir fry until fragrant.
  5. Enter the pandan leaves and spices that have been mashed.
  6. Add broth, cook rice until it expands.
  7. Add ghee or margarine.
  8. Stir gently over medium heat.
  9. Remove when it has thickened (not too thick and not too runny).
  10. Serve while warm, to make it more delicious sprinkle fried onions on it
