Fat Rice Jambi

Dalgano -  Gemuk rice is one of Jambi's culinary specialties and is a breakfast menu that can be found in the morning in every corner of Jambi City. This fat rice is almost similar to nasi uduk or nasi lemak where the process of making it uses coconut milk, lemongrass, and bay leaves.

Nasi Fat is usually served with fried onions, peanuts, anchovies, chili sauce, crackers, and added fried vermicelli, cucumber, and dry tempeh. In this recipe, we will add kaffir lime leaves to enhance the aroma.

  • For 2 kg of rice

ingredients :

  • 2 kg - Rice
  • 2 ingredients - Coconut
  • 2 pieces - Bay leaf
  • 2 sticks - Lemongrass
  • 14 pieces - Kaffir lime leaves (remove the middle stem)

How to make:

  1. Rice: boil the coconut milk, bay leaf, lemongrass, and salt until it boils. Add the rice and cook until the coconut milk is absorbed.
  2. Steam for 45 minutes on medium heat until cooked.
  3. Sambal terasi: puree all the chili ingredients with a mortar.
  4. Omelet: beat the eggs and salt. Pour into a heated skillet with a thickness of cm, let it cook then slice the eggs.
  5. Serve this fat rice dish with an omelet, boiled egg, chili paste, fried onions, and starch crackers.
