Ingredients

  • 8 glasses of water
  • 2 teaspoons fine salt
  • 2 cups polenta
  • 6 tablespoons butter, divided

How to make Polenta Porridge

  1. Bring the water and salt to a boil in a saucepan, then add the polenta to the boiling water. Do not forget to stir until all the ingredients are mixed.
  2. Reduce heat to low and simmer, stirring constantly, until the polenta begins to thicken, about 5 minutes. The polenta mixture should still be a little loose. Cover and cook for 30 minutes, stirring every 5 to 6 minutes. If the polenta is too thick to stir, stir with a wooden spoon.   3. Turn off the heat and then stir gently, then add 2 tablespoons of butter to the polenta. Stir in polenta until butter melts. Mix 1/2 cup Parmigiano Reggiano cheese in polenta until cheese is melted. Cover and let sit 5 minutes until thickened; Stir and taste the salt before transferring to a serving bowl. Place the remaining 1 tablespoon of butter and about 1 tablespoon of freshly ground Parmigiano Reggiano on top of the polenta for garnish.
