Ingredients

  • 5 cups dry peas
  • 4 liters of cold water
  • 3 pounds of ham bones
  • 4 onions, thinly sliced
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 pinches of dry marjoram
  • 6 stalks of celery, chopped
  • 6 carrots, chopped
  • 2 potatoes, diced


How to make Canadian Pea Soup

  1. In a large saucepan, cover the peas with 2 liters of cold water and soak overnight. If you need a quicker method, gently boil the peas for 2 minutes, then soak for 1 hour.
  2. Once the peas are soaked, add the ham bones, shallots, salt, pepper, and marjoram. Cover, bring to a boil, and simmer for 1 1/2 hours, stirring occasionally.
  3. remove bone; chop the meat, cut into cubes and return the meat to the soup. Add celery, carrots, and potatoes. Cook gently, uncovered for 30 to 40 minutes, or until vegetables are tender.
