Ingredients

  • 1.2 Kg mix of berries and red fruit (eg sour cherries, strawberries, raspberries, currants)
  • 1 vanilla
  • 1 l cherry juice or black currant
  • 6 tbsp food flour
  • 2-4 tbsp Cassis liqueur (black currant liqueur, to taste)
  • 4-5 tbsp sugar


How to Make Rote Grütze Pudding

  1. Wash and clean the fruit and let it dry on a kitchen towel. Rock cherries, halve or quarter large strawberries, pluck raisins from panicles. Cut the vanilla in half lengthwise and scrape off the pulp. Bring the pulp and pods to a boil with the fruit juices in a saucepan.
  2. Mix the starch with 3-4 tablespoons of water and pour it into the boiling fruit juice while stirring. Cook for 2-3 minutes until the starch binds.
  3. Add prepared fruit and, if you like, liqueur. Only let the fruits heat up in the drink for a short time, boil for a maximum of 1-2 minutes - they should not become mushy or crumble.
  4. Remove from heat and, depending on your taste, sweeten with more or less sugar. Let the groats cool. Remove the vanilla pods before serving and serve the grits with light whipped cream or vanilla sauce, if desired.
