Dalgano - Brazilian Food | This Brazilian snack has a rich pudding on top and a chewy coconut crust on the bottom. The crust and vanilla custard come from the same dough. When dry coconut floats, it forms a macaron-like crust and when roasted turns brown. Once cool, turn the dessert over to reveal a glossy, light layer of custard.

White sugar makes the pudding light yellow, and brown sugar makes it golden. Allow the quindim to cool and allow to harden completely before turning the muffin tins. Ingredients

  • 24 large egg yolks
  • 3 1/2 cups granulated or brown sugar
  • 12 ounces unsweetened frozen grated coconut (about 1 1/2 cups loosely packed), thawed
  • 4 tablespoons unsalted butter, melted, plus softened butter for greasing the muffin tin
  • 1/2 teaspoon kosher salt
  • 4 large egg whites
  • Hot water, as needed


How to make Quindim

  1. Preheat oven to 350°F. Spread softened butter onto a standard 12-cup muffin tin. Set aside. Using a rubber spatula, push the egg yolks through a thin wire sieve into a medium bowl. Set aside.
  2. In a medium bowl, combine sugar, coconut, butter, and salt together in a whisk. Add the egg yolks gradually in 4 parts and mix well after each addition. In another medium bowl, beat the egg whites for 1-2 minutes with a whisk until firm peaks form. Mix the egg whites in a bowl containing the coconut mixture.
  3. Spread coconut mixture evenly in prepared muffin cups (about 1/3 cup each). Place the muffin tin in a large, sturdy toaster. Put hot water in a saucepan and fill half a muffin cup. Carefully place in the preheated oven. Bake for 34-38 minutes until the quindim is firm and the top is golden. Carefully remove the quindim from the oven. (Leave the oven on.) Remove the muffin tins from the pans. Leave the water in the pot and set it aside. Allow the Quindim to cool completely on a wire rack for about 1 hour. Return the toaster to the oven with water for the last 10 minutes of cooling. (Use hot water to loosen the quindim from the muffin pan.)
  4. Remove the pot of water from the oven. Run a small offset spatula around the side of each quindim to separate from the muffin pan. Gently submerge the muffin pan in hot water for 5 seconds to loosen the quindim. Turn the muffin tin over on a plate and tap the table to remove the quindim from the muffin tin.
