Fried pizzelle, also known as montanare, is a Neapolitan specialty made with simple and delicious ingredients: in this version, the fried pizza dough is seasoned with tomatoes, grated, and Grana Padano flakes.

Ingredients

For dough:

  • 350 gr flour
  • 250 ml water at room temperature
  • 7 g dry brewer's yeast
  • 10 g fine salt
  • Re-milled durum wheat semolina


For the dressing:

  • 600 gr tomato sauce
  • 1 clove of garlic
  • extra virgin olive oil
  • basil
  • salt
  • pepper
  • Grana Padano grated and flaked
  • peanut oil for frying



How to Make Italian French Fries Pizza Recipe:

  1. Start preparing the fried pizza from the dough, as it will take some time to rise. In a bowl, collect the flour, yeast, water and start kneading with a planetary mixer on low speed using a whisk just enough to mix. Attach the hook and knead until combined (it will take about 15 minutes), adding salt at the end. Form into a ball and let stand until doubled in size (about 2 hours) and cover with cling film.
  2. After this time, divide the dough into balls of 60 g each with the help of a tarot. Stretch each into discs about 10 cm in diameter with a rolling pin, place on a floured tray with re-milled durum wheat semolina, cover with cling film and let rise for 30 minutes.
  3. Meanwhile, dedicate yourself to the sauce: in a saucepan, season the oil with garlic and, when it is golden, remove from heat. Add the tomato puree, add salt and pepper and cook for 15 minutes or until the sauce reduces.
  4. At this point, fry the pizzelles, a little at a time, in a saucepan over 170° hot oil, until both sides are brown. Drain with a slotted spoon, dry on kitchen paper, and season with the prepared tomato sauce.
  5. Sprinkle with grated Grana Padano and flakes, garnish with basil leaves and serve the fried Pizzelle while still hot.
