How to Make Italian Trentino Dumpling Recipe:

  1. To prepare the dumplings, start with the vegetable stock. In a saucepan, combine 1 potato, 1 onion, 2 cloves of garlic, celery sticks, parsley, carrots, courgette and cheese rind, salt and pepper. Cook for about 1 hour. Meanwhile, treat the bread, with a sharp knife cut into large crumbs, not as fine as breadcrumbs or into small pieces.
  2. Heat the milk and add it to the bread, stirring with your hands. Cut the salami into small pieces.

  4. At this point, put a few tablespoons of flour on a plate, or on a kitchen towel (this method is smoother so you don't risk unraveling the dumplings). Shape into egg-sized balls. Put them in the flour, lightly. Heat the broth and add the dumplings, a little at a time. Cook them for 10-15 minutes. Inside they have to be cooked well, the risk, if they stay in too little water, is that they stay raw and cold. In a saucepan, melt the butter with a few sage leaves.
  5. Serve the dumplings. It is recommended to serve four for each restaurant. Season them and enjoy your meal!
