Dalgano - China Food | Yusheng or Yee sang is typical cuisine of the Tio Chiu ethnic, Chinese. This typical Chinese food is in the form of fresh fish salad and added with sliced vegetables such as carrots and radishes.

The fish used are generally tuna or salmon which are processed by soaking in a mixture of cooking oil, sesame oil, and pepper. The sauce used is also unique, namely a sauce made from a mixture of oil, plums, cinnamon powder, and sugar. Yusheng has a distinctive, savory, and delicious taste.

Ingredients:

  • 1 tsp sesame oil
  • 3 tbsp water
  • 2 tbsp plum sauce (can be substituted by mixing 1 cup plum jam, 1 tsp garlic powder, 1 tbsp rice vinegar, and 1/4 tsp ground ginger)
  • 1 cucumber
  • 1 carrot
  • 1/4 white radish
  • 80 grams of purple sweet potato
  • 1/4 grapefruit
  • 50 grams of all-purpose flour
  • 2 tsp salt
  • 30 grams of unsalted butter
  • 400 ml vegetable oil
  • 1⁄2 tsp ground pepper
  • 1 tsp five-spice powder or ngo hong
  • 1 tsp roasted nuts (can use cashews or almonds) Pickled ginger to taste (optional)
  • 1 piece of lime Salmon flesh to taste, according to taste
  • 1 tsp roasted sesame seeds
  • 1 tsp olive oil


How to make yu sheng:

  1. Mix sesame oil, water, and plum sauce in a bowl. Stir well and set aside.
  2. Grate the seeded cucumber using a large hollow grater. Also, grate the carrots and white radish. Peel the grapefruit skin and take the flesh of the fruit. Set aside.

  4. Wheat crackers: Combine all-purpose flour, salt, and butter in a bowl, mix well. Add water little by little until it forms a soft dough. Roll out the dough and cut it into small rectangles. Heat the oil over medium heat and fry until golden brown. Drain and set aside.
  5. Prepare a large serving plate. Arrange all the ingredients for the yu sheng on the edges then place the salmon pieces in the middle. Add olive oil, mixed plum sauce, five-spice powder, sesame seeds, and groundnuts to the salad. Yu sheng is ready to be enjoyed with the family.
