Ingredients

  • 6 tablespoons of good olive oil
  • 2 small French loaves or boules, cut into 1-inch cubes (6 cups)
  • 2 teaspoons kosher salt
  • 4 large ripe tomatoes, cut into 1-inch dice
  • 2 greenhouse cucumbers, unpeeled, seeded and sliced   1/2 inch thick
  • 2 red bell peppers, core removed and cut into 1 inch
  • 2 yellow bell peppers, skewered and cut into 2.5 cm dice
  • 1 red onion, then cut in half and thinly sliced
  • 40 large basil leaves, coarsely chopped
  • 6 tablespoons capers, drained
  • For the vinaigrette:
  • 2 teaspoons finely chopped garlic
  • 1 teaspoon Dijon mustard
  • 6 tablespoons of champagne vinegar
  • 1 cup good olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper



How to make Panzanella Salad

  1. Fill a large skillet with oil and heat it.
  2. Add bread and salt; cook over low to medium heat, stirring frequently, for 10 minutes, or until lightly browned. Add more oil as needed.
  3. Mix all ingredients in a vinaigrette.
  4. In a large bowl, add the tomatoes, cucumber, red bell pepper, yellow pepper, onion, basil, and capers. Add bread cubes and mix with vinaigrette.
  5. Season liberally with salt and pepper. Serve, or let the salad sit for about half an hour to allow the marinade to combine.
